Grilled Cider-Brined Pork Tenderloin with Fennel Apple Slaw and Apple Cider Gastrique – $6.75

This is phenomenal. The pork is incredibly tender and well-seasoned. The fennel gives a nice crunch with a subtle heat countered by the apple cider gastrique. It’s also a good portion for the price.

The huckleberry doesn’t quite work. The bison is kind of bland, overpowered by the tart huckleberry. The elements are disjointed.
