Disney has shared the first photos of new menu items coming to The Hollywood Brown Derby restaurant in Disney’s Hollywood Studios.
New Hollywood Brown Derby Menu
The images were shared by Disney in a post to the official @disneyeats Instagram account. The menu updates include four new appetizers, four new entrees, and two new enhancements. All of the new dishes will be served at The Hollywood Brown Derby starting on March 4, 2025.
The new appetizers will include:
- House-made Ravioli with english peas, carrot purée, and pickled alba mushrooms
- Creamy Corn Bisque with crab salad and saffron crème fraîche
- Sake-Braised Pork Belly with apple ginger purée, shiitake mushrooms, tasso ham, and shiso
- Grand Marnier Liqueur-Macerated Seasonal Fruit Burrata with lollo rosso frisée, caramelized spiced pine nuts, and citrus vinaigrette.
The image above appears to be the new House-made Ravioli, though the induvial images were not labeled in the post.
The second shared image appears to be the Sake-Braised Pork Belly sitting on a bed of shiitake mushrooms. The fruit dish to the right is the Seasonal Fruit Burrata, which will likely change from the pictured strawberries to whatever fruit is currently in season.
The four new Hollywood Brown Derby entrees include:
- Filet Mignon with potato-carrot mash, spicy broccoli rabe, black garlic butter, and madeira demi
- Grilled Ora King Salmon with creamed corn succotash, pancetta, and spring onion pistou
- Lamb Shank with a quinoa-pea salad, paneer paratha chips, and mint yogurt
- Free-Range Chicken with scallion-chorizo cakes, roasted squash, grilled peppers, and red mole sauce.
The entree images in the post were added in the same order as the menu, so the left image is the Filet Mignon and the right image is the Grilled Ora King Salmon.
The final images show the Lamb Shank on the left and the Free-Range Chicken on the right. While not pictured, the new menu will also include two new enhancements:
- Au Gratin Potato with black diamond cheddar
- Braised Wild Mushrooms with shallots, tarragon, and truffle butter
