Several new menu items have been added at The Hollywood Brown Derby in Disney’s Hollywood Studios. Some have just been added with the summer menu while others are holdovers from spring. Here is what our reporters thought!
Menu Items
Housemade Ravioli – $15
English Peas, Carrot Purée, Pickled Alba Mushrooms

This is really good. There is a sweetness from the carrots that meshes well with the imitation bacon flavor, which adds a smoky saltiness. Overall, the carrot puree makes the dish sweet, though it lends itself to the creaminess.
There are three housemade ravioli per order, making this a good start to the meal.

Beet and Kale Salad – $13
Spinach, Warm Bacon Vinaigrette, Goat Cheese Cream, Beet Purée, Candied Walnut

This salad is everything you’d want it to be. You have the sweetness of the beets and candied nuts, which blend well with the savory profile of the cheese. The kale was excellent and very fresh.
We loved this. It was a nice, refreshing salad with a big, shareable portion size for an appetizer.

Stuffed Butternut Squash – $34
Potato-Chickpea-Vegetable Filling, Roasted Spring Vegetable, Mushroom-Lemongrass “Cream” Sauce (Plant-based)

The cream sauce in this dish tastes like cashew cream, but very lemony. It doesn’t strike us as a summer dish, despite the lightness of the cream sauce. It’s pretty good with the graniness of the cashew flavor profile and the well-roasted vegetables.
You get a lot of food for the price. The dish itself is nothing crazy; it’s fairly average, though it’s different than what you’ll find in a lot of other places around the property.

Fried Pork Chop – $45
Yuzu Beurre Blanc and Summer Vegetables

The server told us that the pork was similar to a schnitzel. It was very tender and juicy, and we loved it. It is absolutely exceptional. The flavor of the pork with the seasoning and salt is perfect, with a slight creaminess from the sauce. It is a little citrusy on the backend.
The sides could use a little work; they’re fairly unremarkable.

Seafood Fregula – $51
Steamed Clam and Mussel, Poached Scallop, Fregola Pasta, Spring Greens, Crab-Saffron Cream

When we tried the sauce, it just tasted like crab. That said, the pasta needs it because it is very plain otherwise. We thought the sauce was a little too fishy for our taste. The seafood itself was good, though the dish overall is a bit weird.

Braised Center-Cut Short Rib – $54
Hominy Purée, Roasted Vegetables, Smoky Adobo Glaze, and Beef Jus

It is very smoky and tender with some Southwestern flavors going on. The hominy puree and the roasted vegetables are the best part of the dish. The short rib is cooked perfectly, but the price point is steep for a short rib. $54 is what we’d pay for a filet rather than this. The price should be a little lower.
It is really good, just not at the right price.

Honey Pot de Crème – $14
Strawberry Compote, Salted Streusel, and Ginger Sponge Cake

While it looks small in photos, the bowl this dish is served in is quite deep. There is a lot of cream. It tastes like the most decadent strawberry shortcake you’ve ever had. The cream itself is very sweet, though there is a lot of ginger flavor from the accompanying ginger sponge cake.
Everything in this shareable dish works well together; it is just spectacular.

Vanilla-Fruit Cheesecake – $14
Vanilla Cheesecake, A Peach Sponge, A Streusel, a Strawberry-Peach Compote, and a Mango Crunchy Tuile

This dessert is good, though it isn’t something we’d want all the time. The slight peach flavor mixed with the cheesecake is interesting. The cheesecake itself is solid, though nothing out of this world.
