REVIEW: Mac & Cheese Food Truck at Food Truck Park in Disney Springs Offers Generous Bowls of Cheesy Goodness

It all started with a rumor… that was later confirmed … and finally the day came. Today marked the grand opening of the new Mac & Cheese Food Truck at Food Truck Park in Disney Springs and we were there to taste all the golden cheesiness for you. If you’re looking for a quick snack or meal at the Springs, read on and find out which mac is right for you… and if you make it all the way to the end, there’s even some special savings in it for you, but just for today, so don’t delay! Let’s dig in.

Barbecue Brisket Macaroni & Cheese – $11.00

We’ll start off with the biggest disappointment. We were advertised a smokey gouda and cheddar mac, but the sauce they drizzle over this is intensely sweet. It’s basically quick service BBQ sauce, which unfortunately throws the whole dish off. The brisket, however, is very soft and really melts in your mouth. The onion rings are battered and not breaded, which is nice, and they reminded us of onion rings you’d get at a county fair or carnival. Overall, though, this brisket mac is less than the sum of its parts. The individual parts are good, but they just don’t mesh well together. If you really want brisket, we recommend asking them to hold the sauce.

Bacon Cheeseburger Macaroni & Cheese – $10.00

Don’t let the fancy toppings, like the potato sticks and bacon, fool you. This cheeseburger mac is Hamburger Helper by any other name. The ground beef flavor here isn’t very strong, but the toppings on it (ketchup, mustard, pickles, iceberg lettuce) definitely give it that cheap cheeseburger flavor. The potato sticks were a little soggy, and we think the dish would’ve been better if they’d have been crispier. For what it’s worth (you are at a theme park, after all), we noticed that this mac does sit a bit heavier in the stomach, but that didn’t stop it from being one of our favorites.

Lobster and Shrimp Macaroni & Cheese – $13.00

At $13.00, this is the most expensive bowl on the lineup, and while we didn’t taste much lobster, the shrimp flavor really comes through here. It had chunks of shrimp, plus lobster shredded throughout. The macaroni for this particular dish was cooked perfectly, and the cheese had a sharp, swiss-like flavor. There was some kind of spice in this one that we couldn’t quite pinpoint, but it was really good and gave just enough kick. The butter crackers and scallions don’t really add much, but they make for nice presentation.

Chicken Parmesan Macaroni & Cheese – $10.00

The base sauce of this mac is a garlic-heavy alfredo parmesan sauce. The chicken they use for the chicken parm is actually just the same chicken breast nuggets you can find throughout most Walt Disney World counter service restaurants. That being said, we love these chicken breast nuggets, and in this situation, they’re topped with a sweet marinara, making them even tastier. The croutons and microbasil in this seem unnecessary, but all in all, this is a tasty bowl of mac.

Six-Cheese Crunchy Macaroni & Cheese – $8.00

The base macaroni on this is a swirly Cavatappi pasta, which is great for holding the tart white cheese sauce. Unfortunately, that’s where the depth and sophistication of this dish comes to a screeching halt. This really does just taste like you flung a handful of Cheetos––erm, “Crunchy Cheesy Puffs”––on a bowl of mac. It makes for a strange texture combination, and while it isn’t a bad combo, most of us didn’t really care for it.

Overall (and a Coupon)

Overall, we’d say the Mac and Cheese Food Truck is a great addition to Food Truck Park in Disney Springs. The portion sizes are generous, the pricing isn’t too crazy, and there’s nothing more comforting than warm mac and cheese on a chilly Orlando night, or after a few mules at Jock Lindsey’s.
