We stopped by the Boardwalk Bakery to try their new St. Patrick’s Day Mint Cookies ‘n Cream cupcake.
Chocolate Cupcake, Mint Cookies ‘n Cream Mousse Filling, Whipped Cream, Shamrock Sugar Cookie
Holy moly guacamole, this is delicious! (Don’t worry; there’s no guacamole in it.)
The chocolate cake is perfect — moist and light. The whipped topping is fluffy, creamy, and sweet.
The sugar cookie adds a bit of texture to the cupcake.
The Mickey mint filling is just the right amount. When eaten by itself, the filling is very minty, almost like eating an Altoid.
However, the mint flavor blends perfectly when eaten with the whipped cream and cake!
We highly recommend this treat at the end of the rainbow!
