The limited edition cookie available at Gideon’s Bakehouse in Disney Springs this month is toasted coconut caramel chocolate chip.
The menu this month is “The Summoning Song of Lydia Lovecraft,” featuring the character of Lydia playing the lyre and surrounded by ghosts.
Toasted Coconut Caramel Chocolate Chip Cookie – $6
Gideon’s has hit it out of the park once again. This cookie is a must-get for coconut lovers.
The caramel cookie is moist and perfectly baked. The caramel flavoring is not overwhelming.
It’s coated in chocolate and coconut chips. The coconut chips do tend to fall off but add a crunch when you get them in a bite.
Like many Gideon’s Bakehouse cookies, it is also sprinkled with sea salt that helps break down the sweetness of the chocolate.
We would pair this cookie with a cold brew — maybe the salted caramel cold brew that is still available at Gideon’s.
This cookie is an excellent option.

That’s hilarious! I’ve been making cookies almost exactly like that for 40 years. I put the chocolate chips & coconut in the batter & just put a bit of sea salt on & drizzle the caramel over the cookies once they’re cooked & cooled a bit.
