It’s almost time for Mardi Gras: International Flavors of Carnaval at Universal Studios Florida and the full list of food booths, plus a preview of a few new menu items, has been released.

Booths from 2023 that are not returning this year are Denmark, India, Indonesia, Japan, and Trinidad & Tobago. New booths include China, the Coca-Cola Market Square, and the Philippines.
Mardi Gras Food Preview
Universal Orlando Resort teased the following menu items.
Returning from last year to the Germany booth is Chicken Schnitzel: Breaded Chicken Cutlet served with baked Cheese Spaetzle.
The Mexico booth will serve Chilaquiles Verdes: Pulled roasted Chicken, Corn Tortilla, Tomatillo Salsa Verde, Oaxaca & Cotija Cheese, Crema Mexicana.
Among the new items at the China booth is Szechuan Noodle Salad: Chinese Noodle, Spicy Black Vinegar Dressing, Cucumbers, Cilantro, Scallions, Peanuts.
And new at the Puerto Rico booth is Pastelons: Layers of sweet yellow Plantains, Picadillo Beef, Edam cheese.
It wouldn’t be Mardi Gras without beignets. This classic treat (sweet fried pastry dusted with powdered sugar) will be available at the New Orleans booth.

Universal Mardi Gras runs from February 3 through April 7.
