Cosmos Cafe & Market is the main quick-service restaurant of the new Stella Nova Resort. It offers breakfast, lunch, and dinner with food options of made-to-order American cuisine. There are grab-and-go selections available as well.
With the resort now open to guests, we visited the cafe to try breakfast, lunch, and dinner.

The restaurant’s entrance features the Cosmos Cafe & Market sign along with a blue light that runs along the wall near the floor behind geometric chairs.
Breakfast
Huevos Rancheros – $14
Two over easy eggs, black beans, Cotija cheese, guacamole, potatoes, house-made pico de gallo, cilantro, tostada.
Overall it’s a solid dish. The potatoes were very nice and we really enjoyed them. The eggs were cooked right. There were a lot of black beans. Everything tasted good individually and also mixed well together.

Monkey Bread – $10
Chocolate, cinnamon, walnuts, and sweet glaze
The monkey bread was certainly a shareable size. It was not served hot nor was it particularly fresh. The exterior was hard though soft underneath. There was a good amount of chocolate and cinnamon throughout as well.

Lunch
Tossed Salad – $10
Mixed greens, carrots, cherry tomatoes, cucumbers, radish, and red onions


The dressing options include balsamic vinaigrette, blue cheese, golden Italian, and ranch. We had the Italian dressing. One member of our review team summarized their review, stating “If I was at an airport this would be spectacular, but alas, I am not.” For a tossed salad, there was not much going on with it. It was fresh but felt like you’re only eating dressing.

Pickle-fried Chicken Sandwich – $15
Crispy chicken thigh, crunchy coleslaw, pickles, cosmic sauce, and brioche bun


The sandwich was very good. The fried chicken cutlet was thick and the pickles had the perfect flavor. There was a slight heat and peppery kick, possibly from the cosmic sauce. The sandwich also had the right amount of coleslaw. The bun was toasted, not just straight out of a bag. The fries were also very good. They were thick cut with a slight crunch to the exterior, soft inside, and nicely salted.

Vegan Muffin
The muffin was huge and well-sized for the price. It had a hard crust exterior while the inside was soft. The muffin was made with carrots as there were orange flecks and it had a traditional carrot cake flavor. For a vegan muffin, it was not bad.

Warm Chocolate Walnut Brownie – $9
Hand-whipped cream, chocolate sauce, powdered sugar


The hand-whipped cream and powdered sugar were “absolutely not present.” Although it was fresh and served hot and soft, it’s a standard brownie with walnuts. If someone wants a bite of chocolate, it’ll do the trick.

Dinner
Mexican Street Corn – $7
Roasted corn, aioli, chili, cilantro, and lime
The Mexican street corn is topped with cheese, although it’s not listed as an ingredient. It was very sweet and creamy with a light spice flavoring and cooked perfectly. The portion size is decent and could definitely be sharable.

Very Cheesy Mac-n-Cheese – $7
Elbow pasta, three-cheese blend, and toasted panko
This was an immediate 7 out of 7. The pasta was perfect, not too al dente and not too mushy either. It was one of the best mac-n-cheese dishes we’ve had. We thought it was so good it should be an entree. It’s delicious and a tremendous deal.

Chicken Parmesan Sandwich – $15
Crispy chicken breast, fresh mozzarella cheese, tomato sauce, and French baguette


One member of our review team said, “This tastes like I took my mother’s leftover four-day-old chicken cutlets and microwaved them into a sandwich.” It was extraordinarily dry. The marinara sauce does very little and the bread is not great.

Pulled Pork Sandwich – $16
Slow-cooked barbecue pulled pork, crunchy coleslaw, house-made barbecue sauce, pickles, onion rings, and brioche bun


The sandwich was edible and overall, it was good. The pulled pork was tender and soft with a tangy BBQ flavor while the bun was soft, buttery, and toasted.

The side salad was better than the Chicken Parm sandwich. It was a hearty salad with a nice variety of ingredients including onions, black beans, tomatoes, and cucumbers.

Stella Burger – $15.50
Double smashed beef patty, cheddar cheese, lettuce, tomato, onion, pickles, cosmic sauce, and brioche bun. Gluten-free bun available upon request.


Both appearance and taste-wise, this burger reminded us of a subpar fast-food burger with a much bigger price tag. The beef patty was in need of more seasoning, especially salt. The cheese tasted fake and “wasn’t cheesy at all.”

The chop salad we got as a side with the burger was much better. The shredded carrots were crunchy and all of the vegetables tasted very fresh. We enjoyed this even more than the butter lettuce salad and would get it again.

Hot Honey Chicken Pizza – $15.50
Chicken, grilled corn, caramelized onions, hot chili oil drizzle, and garlic cream


We expected more from this dish but overall, it was fine. The pizza had very little spiciness despite the hot chili oil drizzle. The chicken was tender and you could definitely taste the garlic cream as well as the caramelized onions and grilled corn.

Chocolate Torte – $10
Vanilla sauce and powdered sugar
We didn’t see the vanilla sauce at first but then realized it was the vaguely clear liquid beneath the cake. The chocolate torte overall was unremarkable, just a standard cafeteria dessert. It was sweet but also dry and tasted like it was from an Automat.
