Seven New Dishes Debut at The Hollywood Brown Derby in Disney’s Hollywood Studios
A new slate of menu items has arrived at The Hollywood Brown Derby in Disney’s Hollywood Studios. As a note, these items have been available at the restaurant for a few weeks now but the announcement came today.
Disney Eats shared a teaser for the updated Brown Derby menu on Instagram, highlighting several new dishes now available at the Signature Dining restaurant on Hollywood Boulevard. The lineup includes new seafood, steak, pork, short rib, and dessert offerings.
Pan-Roasted Halibut – $54
The Pan-Roasted Halibut is served with leek vichyssoise risotto, peas, and citrus. This updated seafood entrée pairs the mild white fish with a creamy risotto and bright citrus notes.
Char-Grilled Octopus – $20
The Char-Grilled Octopus appetizer is served with herb-roasted potatoes, chimichurri, and chipotle-harissa aïoli. The dish brings together grilled seafood, roasted potatoes, herbaceous chimichurri, and a spiced aïoli.
Fried Pork Chop – $45
The Fried Pork Chop entrée is served with yuzu beurre blanc and summer vegetables. The citrus-forward beurre blanc adds a lighter seasonal element to the fried pork dish.
Braised Center-Cut Short Rib – $54
The Braised Center-Cut Short Rib is served with hominy purée, roasted vegetables, smoky adobo glaze, and beef jus. The entrée leans into richer flavors with the combination of slow-cooked beef, adobo, and jus.
Honey Pot de Crème – $14
For dessert, the Honey Pot de Crème is served with strawberry compote, salted streusel, and ginger sponge cake. The dessert pairs honey and strawberry flavors with crunchy and spiced cake elements.
Vanilla-Fruit Cheesecake – $14
The Vanilla-Fruit Cheesecake features vanilla cheesecake, peach sponge, strawberry panna cotta, streusel, strawberry-peach compote, mango coulis, and crunchy tuile. The dessert combines several fruit components with the cheesecake base.
Filet Mignon – $56
The Filet Mignon is served with rhubarb-red wine demi-glace, Yukon gold potato, and braised endive. The steak entrée uses rhubarb and red wine in the sauce for a more seasonal take on the classic Brown Derby offering.
The Hollywood Brown Derby is one of the more upscale dining options at Disney’s Hollywood Studios and is known for its Old Hollywood-inspired setting, Famous Cobb Salad, and Brown Derby Original Grapefruit Cake.
