A new dining experience will be replacing Shula’s Steak House at the Walt Disney World Swan and Dolphin Resort.
Shula’s Steakhouse at the Walt Disney World Dolphin will close to make way for the new restaurant, Bourbon Steak by Michael Mina. Disney has announced that the new restaurant will replace Shula’s Steakhouse at the Dolphin Hotel.
Michael Mina is a James Beard Award-Winning chef. This will mark the third location of The Mina Group in Florida as the other two restaurants are located in Miami and Delray Beach. Mina stated,
The Walt Disney World Swan and Dolphin is the ideal location for Bourbon Steak. Their strong commitment to culinary excellence aligns perfectly with our vision at The Mina Group. We see it as an ideal partnership and look forward to spending time with the local team to realize this dynamic new project. Each Bourbon Steak is uniquely designed to represent the environment it is in, and I’m excited to unveil what we have in store for Orlando.

The Walt Disney World Swan and Dolphin Resort website lists the restaurant as coming soon. Bourbon Steak is “an ode to the traditional steakhouse” and “celebrates the details that make meals memorable, from perfect sears and tableside old-fashioneds to shared sides and milestone moments.” The website lists the restaurant’s hours of operation as open daily from 5 p.m. to 11 p.m. and reservations are recommended.
Bourbon Steak will bring a modern take on the American steakhouse with premium cuts of beef and seafood, decadent desserts, and world-class beverage offerings.

Shula’s Steakhouse opened at the Walt Disney World Dolphin in 1999. The restaurant’s inspiration comes from legendary NFL coach Don Shula and the 1972 Miami Dolphin’s “perfect season.” The restaurant contains Miami Dolphins memorabilia representing the team’s undefeated season in 1972. Shula’s Steakhouse has earned “Critic’s Choice for Orlando’s Best Restaurant” and has consistently won the “Wine Spectator Best of Award of Excellence.”
Shula’s Steakhouse will continue to take reservations through June 14, 2025.
