  • Make Strawberry Compote by mixing all compote ingredients in small saucepan over medium heat. Cook until strawberries break down and sauce has slightly thickened, approximately five minutes. Mash strawberries with back of a fork. Set aside.
  • Slice bread into 2 inch thick slices. Cut a slit into each slice of bread and stuff with banana slices.
  • In a shallow bowl, whisk together eggs, cream, 2 tablespoons cinnamon sugar, and vanilla.
  • Soak each slice into the batter, coating all sides.
  • Pour approximately 1/4 inch of vegetable oil into skillet and heat over medium heat.
  • When the oil is hot, add battered slices and cook until golden. About 2 minutes per side.
  • Briefly rest toast on a paper towel. Pour the rest of the cinnamon sugar in a shallow bowl and coat slices.
  • Serve with sliced strawberries and strawberry compote.
