Whether this is your first affair or your fiftieth with the forbidden sweet treat, we assure you, just one bite of our Tonga Toast Copycat Recipe from Disney’s Polynesian Village Resort and you’ll hear ukuleles strumming softly in the distance as a rolling breeze gently calls to you from the Seven Seas Lagoon.
One of Walt Disney World’s top three best-selling breakfast items, Tonga Toast is deep fried, banana-stuffed French Toast covered in cinnamon sugar. I’m going to go ahead and repeat that for you. Heck, it’s so good, that you can even find it in two locations at Disney’s Polynesian Village Resort: Kona Café and Captain Cook’s.
Make Strawberry Compote by mixing all compote ingredients in small saucepan over medium heat. Cook until strawberries break down and sauce has slightly thickened, approximately five minutes. Mash strawberries with back of a fork. Set aside.
Slice bread into 2 inch thick slices. Cut a slit into each slice of bread and stuff with banana slices.
In a shallow bowl, whisk together eggs, cream, 2 tablespoons cinnamon sugar, and vanilla.
Soak each slice into the batter, coating all sides.
Pour approximately 1/4 inch of vegetable oil into skillet and heat over medium heat.
When the oil is hot, add battered slices and cook until golden. About 2 minutes per side.
Briefly rest toast on a paper towel. Pour the rest of the cinnamon sugar in a shallow bowl and coat slices.
Serve with sliced strawberries and strawberry compote.
