After months of anticipation, Gideon’s Bakehouse has officially soft opened at Disney Springs today!
Staff were out yesterday greeting guests in between training sessions. Select Cast Members were also treated to a special preview of the location.
The entire brick-walled locale has been transformed to a mysterious, almost steampunk-style bookshop-turned-bakery. Previously the home of Lindwurm Bookseller “Curious Books & Antiquities”, Gideon’s Bakehouse also serves up cookies, cakes, and curiosities. There’s a whole backstory to the location overall, hinted at on their Disney Springs landing page:
There appears to be a deep and complicated history of the building we inhabit at our Disney Springs location. We’ve managed to uncover some interesting information about the original owner of our vintage space (seen here in a photo that was found in our walls during construction), and it feels like he is unveiling more to us as we rebuild what once was. Along the sides, themed wall art beckons guests inside for a taste of “dreadfully good” half-pound cookies.
While Gideon’s will stock their usual favorites, like the famous chocolate chip cookie, their Disney Springs location is the only place you can try their original Peanut Butter Iced Coffee, as well as experience a Hot Cookie Hour, which takes place nightly.
The windows along the side of the store’s entrance act as curios, filled with books, clocks, and other odd knickknacks.
Despite having made the big leagues with a Disney Springs storefront, Gideon’s Bakehouse still makes sure all their goodies are 100% handmade from scratch. The cookies and cakes you see on display take over 24 hours to prepare and are sold on a first come, first serve basis, meaning the earlier you arrive, the wider the selection you’ll have to choose from. Currently, their East End location takes preorders via a webpage, but Gideon’s has already stated that preorders for Disney Springs will be unavailable until they “find their groove.” Other cookie logistics you should keep in mind when visiting Gideon’s Bakehouse is that there is a limit of 6 cookies per person in order to make sure everyone has a fair shot at some of the limited edition varieties.

To celebrate Christmas, Gideon’s Bakehouse has these adorable card menus, featuring Santa Claus or Krampus.

As you walk into the creepy cookie shop, you realize how small it is—it’s really just a winding queue leading up to a bakery case and registers, but the walls are packed with so much cool artwork, it makes for a really interesting experience!
Some of their cakes and cookies are on display for guests to view. Cake selections will vary by day, but today they had red velvet, salted caramel, and peanut butter flavors.
Of course, their classic half-pound cookie flavors are also on display. As previously mentioned, there is a limit of 6 per person total, and a limit of 2 for the limited edition flavors.

Gideon’s Bakehouse will be open today through 7:00 PM. Starting on Thursday, Gideon’s plans to expand their hours to mirror those of Disney Springs, closing at 10:00 PM.
