As part of the D100 celebration, Bubbles & Brine was a food booth added late to the 2023 EPCOT International Food & Wine Festival, and it has decided to hang around for the 2023 Festival of the Holidays! On the menu, you’ll find a shrimp cocktail, a crab claw cocktail, and yes, even Dom Pérignon. A chilled seafood trio was added to the menu later.

While all items are making their Festival of the Holidays debut here, the menu remains the same from this year’s EPCOT International Food & Wine Festival.

*NEW* Jumbo Shrimp Cocktail with Prosecco Cocktail Sauce and Grilled Lemon – $14.00
This dish contains two large shrimp, plus the prosecco sauce and charred lemon. We weren’t impressed. The shrimp didn’t seem particularly fresh and had more of a fishy taste than we would have liked. For the price, it looks like a good deal, but we would skip it.
*NEW* Jonah Crab Claw Cocktail with Stone-Ground Mustard Sauce – $12.00
These are a hit. The dish has four moderately-sized claws. For what it costs, it’s a reasonable value. The ground mustard complemented the dish instead of overwhelming it. This is a deal we think you should go out of your way to check out. The taste and value merit consideration.

Jumbo poached shrimp with prosecco cocktail sauce, Jonah crab claw with stone-ground mustard sauce, and oysters on the half shell with sparkling crème fraîche and caviar
This dish is a sampling platter of what you would find at a high-end champagne party — fitting for a booth that celebrates the 100th anniversary of The Walt Disney Company. You get two jumbo shrimp, two crab claws, and two oysters on half-shells. It’s a good-sized dish for sharing with another friend.
The prosecco cocktail sauce is the same that is provided with the jumbo shrimp cocktail. It has a slight sweetness to it and a bit of horseradish. It’s a standard cocktail sauce. The stone-ground mustard, which is also served with the separate Jonah crab claw cocktail, is a highlight. It has a slight spice and a creaminess that pairs well with the shrimp and crab claws.
The chilled jumbo shrimp taste the same as the ones in the cocktail, although are a little smaller. The crab claws are also small but have a decent lump of meat inside and go great with the stone-ground mustard. This is the best part of the dish — which does make it hard to justify getting the trio over just the Jonah crab claw cocktail.
The oysters are completely new to the menu, though, and aren’t offered separately. The caviar is a gimmick that adds to the price without adding much flavor to the oysters. The crème fraîche is interesting and different. It’s creamy and fatty with a little bit of a sticky consistency. There’s only a dollop on top but it works well with the oyster and brings down the brininess and typical ocean taste. The oysters will make or break the dish for most people since they are so different.
If you are a seafood fan and enjoy the other two Bubbles & Brine dishes, you might like this to get a sampling of both plus the oysters. Just don’t expect anything radically impressive.
If you don’t like seafood or oysters in particular, we can’t recommend this dish, especially not for $21.

Moët & Chandon describes this as having a “golden straw yellow with green highlights,” as well as “the vibrant intensity of green apple and citrus fruit, the freshness of mineral nuances and white flowers, and the elegance of blond notes (brioche, cereal, fresh nuts).”
*NEW* Veuve Clicquot Rosé, Reims, France ($62/bottle) – $38.00
Veuve Clicquot describes this as having a “coppery-orange color. Expressive aromas of strawberry and very ripe wild strawberries. A full-bodied, structured, vinous palate which stays fresh. Length and character define this champagne.”
*NEW* Dom Pérignon, Epernay, France ($260/bottle) – $69.00
From Dom Pérignon: “The delicate nose unfolds in swaths of color. The green of eucalyptus, mint and vetiver, the yellow-orange of mirabelle plums, apricot and orange blossom, the brown of pepper, cardamom and licorice sticks, and finally silvery saline and toasty hues. The mouthfeel is elegant, expressing luxuriant simplicity and precision. The refined and silky foundation becomes more pronounced at the heart. The finish is dominated by a salinity that leaves a deep sensation of consistency.”

Bubbles & Brine is located in World Showcase Plaza, opposite Port of Entry.
