Rather than offering a limited edition cookie for the entire month as usual, Gideon’s Bakehouse is offering a limited edition cookie each week for June 2025. This week marks the first cookie with the return of Toasted Coconut Caramel Chocolate Chip.
This month’s menu card will remain the same despite the new limited edition cookie each week. On the front is Gilbert, a Gil-Man-esque creature who hopes to make new friends this summer.
His story, shared on the back of the menu card, reads,
Each summer, like the one before, little Gilbert hopes to meet new friends on the seashore. But every year, it seems his sweet hellos are met with horrified screams. Crestfallen, it’s back to the sea he goes to await the following summer with a heart full of woes. This year you can help his poor heart mend when you see little Gilbert by calling him “friend?”

The Toasted Coconut Caramel Chocolate Chip Cookie is back for just one week, June 1-7. We last reviewed this cookie in 2022, and it is once again a hit for us. This is a must-get cookie if you love coconut.
This cookie is moist and perfectly baked. The caramel flavor meshes well and isn’t at all overwhelming.
If you love chocolate and coconut together, you’ll be glad to know that this cookie is covered in both. The coconut chips can fall off and make a slight mess, but they add a nice crunch to each bite.
As with many Gideon’s Bakehouse cookies, this is also topped with sea salt that contrasts with the sweetness of the chocolate.
We think this cookie is an excellent option, and recommend you get one before they’re gone.
