We Ate Ribs, Corn, and ‘Leftovers’ At Rough Cuts in Universal Horror Unleashed

Rough Cuts at Universal Horror Unleashed

Rough Cuts is found next to The Boiler bar, past the Dead Storage area at the front of Universal Horror Unleashed. There are several small barrel tables with tall chairs.

Ribs – $17

These are beef ribs, which was not specified in the menu but was a welcome surprise. The bone is merely for show, because the meat is already removed.

These were surprisingly good. They were cooked well and were tender. The meat was a bit fatty, but juicy and flavorful. The char is subtle and not overwhelming. The BBQ sauce is not as sweet as the description would lead you to believe. The portion size is quite large, especially (spoiler alert) compared to the amount of meat in the sandwiches.

Shoulder – $14

We didn’t like this. The mix of ingredients didn’t work well. The pork was dry and needed some kind of sauce.

We wish the toppings were more of a salsa or chutney. That would have worked better and made the sandwich more juicy. There also wasn’t much meat overall.

Parts and Pieces – $14

This was a much better sandwich, although small for the price. The sausage is cut into pieces, which makes it easier to eat. The onions and peppers are perfectly cooked. The sandwich is spicier than we expected, but still excellent. This is a good option if you don’t want the ribs.

Ears (Vegetarian) – $9
Fire-roasted yellow corn, citrus aioli, grated cotija cheese, Cheetos Flamin’ Hot dust, Tajín, and micro cilantro

This was the star of the menu. It’s a whole cob that has been quartered and grilled. It has a bit of spice from the Cheetos, but nothing overwhelming.

The sauce is excellent, and there was the perfect amount to go with the corn. It paired well with the spicy Cheetos. The corn was cooked perfectly with a little bit of char.

The Leftovers – $8
Chocolate-raspberry monkey bread

This is not what we imagine when we think of monkey bread. We expected a soft, pillowy dough baked with chocolate and raspberry. Instead, we got something with the texture of three-day old cinnamon rolls. It was too dense, dry, and just unappetizing. The chunks of chocolate and raspberry sauce couldn’t save the stale bread.
