While most booths for the 2023 EPCOT International Food & Wine Festival opened July 27, a few stragglers opened on August 15 — including The Noodle Exchange! Several dishes that we enjoyed last year have returned to the marketplace, along with a new take on the shaved beef dish.

- Ramen with Shaved Beef, Shiitake Mushrooms, Pickled Carrots and Daikon Radish, Shaved Peppers and a Soy Egg in Citrus-Sesame Broth – $6.00
- Impossible Pork Udon with Shiitake Mushrooms, Pickled Carrots and Daikon Radish, Baby Bok Choy and a Soy Egg in Savory Chicken Broth – $5.75
- Thai Shrimp with Rice Noodles, Shiitake Mushrooms and Basil in Coconut-Curry Broth – $6.50
- Ramen with Tofu, Shiitake Mushrooms, Pickled Carrots and Daikon Radish, Shaved Peppers and Baby Bok Choy in Citrus-Sesame Broth (plant-based item) – $5.75
Beverages:
- 🆕Parish Brewing Strawberry Mochi Berliner Weisse, Broussard, LA (4.5% ABV) – $5.50 for 6 oz., $9.50 for 12 oz.
- 🆕Pacific Rim Solstice Vineyard Old Vine Riesling, Washington ($25/bottle) – $8.00
This year, the Shaved Beef dish returns to The Noodle Exchange as Ramen, instead of Pho, like it was served last year.

Ramen with Shaved Beef, Shiitake Mushrooms, Pickled Carrots and Dakion Radish, Shaved Peppers and a Soy Egg in Citrus-Sesame Broth – $6.00
The beef is of a good enough quality: tender and juicy. The broth adds a saltiness. The ramen noodles are well-cooked. They’re nice and soft and buttery in flavor.
All of the vegetables add a nice crunch. The mushrooms pair perfectly with the broth as well. The soy egg was well-cooked. Overall, this is a solid dish.
Impossible Pork Udon with Shiitake Mushrooms, Pickled Carrots and Daikon Radish, Baby Bok Choy and a Soy Egg in Savory Chicken Broth – $5.75
This is definitely Impossible meat. Despite getting this just after the marketplace opened, the “pork” was cold. It has a kind of sweet and sour sauce that would probably be good hot. The “pork” is minced so it’s easily spread throughout the bowl.
The vegetables are fresh and the noodles are cooked well. It could be a winner if served hot.
Thai Shrimp with Rice Noodles, Shiitake Mushrooms and Basil in Coconut-Curry Broth – $6.50
For the money, you get several nice-sized shrimp. The curry is present, but not overwhelming. It has a nice soup consistency that works well with the mushrooms, but it should have more vegetables for a curry. It’s not bad for what it is.
Ramen with Tofu, Shiitake Mushrooms, Pickled Carrots and Daikon Radish, Shaved Peppers and Baby Bok Choy in Citrus-Sesame Broth – $5.75
This was just okay. You get two enoki mushrooms that are barely cooked. The tofu has a decent consistency, but overall, the dish is a little lacking. If you don’t eat any kind of meat, it’ll do, but otherwise, you’re better off with the other choices here.

From Parish Brewing: “We took Louisiana’s state fruit as inspiration in this mochi-inspired creation, Strawberry Mochi. With one sip you will melt into the smooth strawberry puree, layered over pillowy hills of creamy lactose. Rich Madagascar vanilla and fluffy toasted rice reminiscent of strawberry shortcake kiss the palate on the finish.”
*NEW* Pacific Rim Solstice Vineyard Old Vine Riesling, Washington ($25/bottle) – $8.00
From Wine Enthusiast’s Sean P. Sullivan: “The aromas offer perfumed notes of diesel, apricot and honeysuckle. Fuller-feeling, bone-dry lime and stone-fruit flavors follow. There’s a kiss of medicine on the finish.”
