Disney Springs will be adding another table service dining location this spring with the expected opening of Wine Bar George. Once open, the establishment will be the only Master Sommelier-led wine bar in the entire state of Florida. Named for highly regarded Master Sommelier George Miliotes, the location will feature a wine list with more than 100 selections by the bottle and glass, alongside a menu developed by Executive Chef Ron Rupert.
In addition to wine and food, the location is also expected to offer wine education, which will be served up in an “approachable and fun manner.” The venue is expected to host special events and visits from renowned winemakers to educate and enlighten guests about food and wine.

Miliotes and Rupert are no strangers to Walt Disney World – both men were part of the opening team of the California Grill at Disney’s Contemporary Resort. Miliotes managed the venue from 1995 to 2002. Rupert also helped open Jiko – The Cooking Place at Disney’s Animal Kingdom Lodge and Ariel’s at Disney’s Yacht and Beach Club Resorts.

“The menu will include a selection of small plates, sharable plates, cheese and charcuterie boards, and desserts. Offerings will feature seasonally relevant items and everything will be made in-house,” Rupert said. “I’ve worked jointly with George to develop a menu that represents both global and local cuisine. Guests can expect to experience food that is familiar, yet new all at once.”
“Ron is incredibly creative, and his expertise will bring a menu that’s designed to complement the wine list,” said Miliotes. “With our menu, guests will have the opportunity to explore endless food and wine pairings.”

Wine Bar George is expected to seat 210 guests in a two-story, 6,000-foot space in The Landing at Disney Springs, across from Jock Lindsey’s Hangar Bar and around the corner from Raglan Road and Morimoto Asia. The concept for the location is similar to a “winemaker’s home estate with a welcoming, comfortable atmosphere.”
