REVIEW: Spring Meadow Cupcake at the Boardwalk Bakery in Disney’s Boardwalk Resort
Over at Disney’s Boardwalk Resort, a new Easter-themed Spring Meadow cupcake has arrived at the Boardwalk Bakery.
This is a yellow cake filled with lemon curd, topped with a chocolate basket handle and buttercream frosting in the shape of flowers and grass.
This cupcake was really cute, I loved the creativity of the chocolate basket handle, and I really wanted to like it… but the taste did not live up to the presentation. For starters, the way they packaged it with the hard, thick paper wrapping made it extremely difficult to get out without covering yourself in frosting (I wish I had had someone there to take a picture of my hands after I removed it from its packaging. It was a mess!)

Lemon flavored desserts are usually my favorites, so I was excited at the promise of the lemon curd filling in this cupcake. But once I cut into it, I was very disappointed in the amount of filling that made it into this cake. It was barely more than one small pocket of filling for an otherwise very large cupcake. This gets a downvote from me for this reason. The small amount of filling I actually got to try was very tasty, but had there been more, it would have greatly improved the score of this dessert overall.
