Gideon’s Bakehouse has reopened today at Disney Springs following an unexpected closure on January 2. The new bakery has announced its grand opening will be this Saturday, January 16, 2021, with giveaways and limited-edition cookies. Speaking of limited-edition cookies, one of Gideon’s special January cookies is coffee toffee chocolate chip and we tried it out during today’s soft reopening.

While waiting in line before the opening at 10:00 AM, we were given a paper menu featuring this month’s handmade cookies, cakes, cold brews, and beverages.

Of course, we couldn’t resist taking a moment to admire the bakery’s occult bookshop-themed interior.

Special Edition Coffee Toffee Cookie – $6.00

This cookie has a vanilla base, then, as the name suggests, coffee, toffee, and chocolate chips with light sprinkles of coarse salt. Extra coffee is sprinkled on top for good measure.

The cookie is soft, but firm enough to hold its shape. Like all Gideon’s cookies, it’s heavy.

The taste is definitely coffee-forward, with toffee taking a back seat. It tastes similar to other Gideon’s cookies, but with a stronger coffee flavor. The coffee aftertaste is persistent.

We would place this in the middle of the pack for Gideon’s cookies. But it’s sure to please both coffee lovers and chocoholics.
