While the menu for Deconstructed Dish didn’t see many changes from last year’s appearance at the EPCOT International Festival of the Arts, that doesn’t mean you should skip this booth, as it offers an unusual take on some classic dishes, newly redesigned for 2021.
Crowds were still lining up at this Food Studio well into the evening.
The open air windows also give guests a show as they see the food being made.
Menu for Deconstructed Dish at the 2021 Taste of EPCOT International Festival of the Arts
Food:
- Deconstructed BLT: Crispy Pork Belly, Soft-poached Egg, Brioche, Watercress Espuma, and Tomato Jam – $7.00
- Deconstructed Reuben: Rye Popover, Corned Beef, Gryuère Panna Cotta, and Brined Brussels Sprouts with Broken Thousand Island Dressing – $6.75
- Deconstructed Strawberry Cheesecake: Whipped New York-style Cheesecake with Fresh Florida Strawberries and Sugar Cookies – $6.25
Beverages:
- Rainboba: Fruit Bursting Boba with Sparkling Water (Non-Alcoholic) – $8.00
- Deconstructed Breakfast: Twinings® Chai Tea Shake with Cream Bourbon, garnished with a Waffle Crisp and Candied Bacon (Also available without alcohol, where maple syrup replaces the cream bourbon) – $11.00 with alcohol, $4.50 without alcohol

Deconstructed BLT: Crispy Pork Belly, Soft-poached Egg, Brioche, Watercress Espuma, and Tomato Jam – $7.00
The pork belly was overdone and dry. The egg yolk did help to improve the disappointing texture of the pork, but it could only do so much.
The tomato jam added a little bit of spice, but it wasn’t enough to save the BLT as the brioche and watercress espuma added nothing to the generally weak and overdone dish.
Deconstructed Reuben: Rye Popover, Corned Beef, Gryuère Panna Cotta, and Brined Brussels Sprouts with Broken Thousand Island Dressing – $6.75
This dish is declining as it sees new iterations, both in flavor and presentation. The corned beef itself had a mild flavor and tender texture, while the rye and panna cotta failed to offer much in the way of taste.
The thousand island dressing added a familiar tanginess to help keep the dish from being a total disappointment. While the taste overall is decent, as a whole, the Reuben fails to impress.
Deconstructed Strawberry Cheesecake: Whipped New York-style Cheesecake with Fresh Florida Strawberries and Sugar Cookies – $6.25
The best part about this booth is assembling the dish together with each forkful, and we think the strawberry shortcake best represents how great this idea can be. The strawberries are ripe with a simple glaze that’s spread across the dish making the flavor present among all the pieces. Slather your fork with the whipped cheese cake, grab a strawberry and munch on the sugar cookies all in one bite. It’s a fun dish and one we very much recommend.
Rainboba: Fruit Bursting Boba with Sparkling Water – $8.00
This layered beverage is pretty simple: boba pearls mixed with sparkling Dasani raspberry lemonade seltzer and raspberry FOMZ. Thankfully, even if you missed out on last year’s Festival of the Arts, this returning drink still comes in the adorable plastic Figment cup!
Deconstructed Breakfast: Twinings® Spiced Apple Chai Tea Shake with Cream Bourbon, garnished with a Waffle Crisp and Candied Bacon (Also available without alcohol, where maple syrup replaces the cream bourbon) – $11.00 with alcohol, $4.50 without alcohol
We wanted so much more out of this drink. It sounded amazing. It wasn’t bad, the flavoring was just far more subdued that we had hoped for (and they went a little light on the bourbon).
