Disney announced springtime menu items now available at The Hollywood Brown Derby restaurant and lounge in Disney’s Hollywood Studios.
The Hollywood Brown Derby Menu Spring 2026
The Hamachi à la Newburg is a $17 appetizer consisting of Citrus-cured Hamachi, Creamy Newburg Sauce, and Fruit Tartare. Also joining the appetizers is a Beet and Kale Salad: Spinach, Warm Bacon Vinaigrette, Goat Cheese Cream, Beet Purée, Candied Walnut for $13.
The new plant-based entree, Stuffed Butternut Squash is Potato-Chickpea-Vegetable Filling, Roasted Spring Vegetable, Mushroom-Lemongrass “Cream” Sauce for $34. For $56 is the Filet Mignon with Rhubarb-Red Wine Demi-glace, Yukon Gold Potato, and Braised Endive.
Another new entree is the Seafood Fregola: Steamed Clam and Mussel, Poached Scallop, Fregola Pasta, Spring Greens, Crab-Saffron Cream for $51.
Glazed Carrots is a new plant-based enhancement for $10, consisting of Mint Yogurt, Pickled Onion, and Dukkah Spice.
