REVIEW: New Compound Crustacean Shrimp Salad Available at Pym Test Kitchen in Disney California Adventure

We reviewed the new Compound Crustacean shrimp salad that’s available for a limited time at Pym Test Kitchen in Marvel Avengers Campus at Disney California Adventure.

When they say shrimp salad, boy, do they mean it. These jumbo prawns are served with the heads on and are definitely the most eye-catching part of the dish.

They are complemented well by a delicious citrus vinaigrette that’s not outright tart but definitely brings a slightly sweet and sour note to cut through the richness of the shrimp. In addition to the massive showpiece prawns, there are several smaller bay shrimp mixed throughout the salad to keep the theme going.

The salad itself is fine. It’s mixed greens with arugula, and it works well with the dressing.

The dressing provides a through-line of flavor but doesn’t necessarily bring the whole dish together. The salad is good with the dressing, and the shrimp is good with the dressing, but the salad and the shrimp never really come together. It’s a bite of each at a time. Whereas something like a Cobb salad, which is made up of many disparate ingredients, comes together as a singular, unified dish when it’s done right. This one just seems to be a collection of ingredients on a plate that are neighbors more than partners. That being said, it’s a delicious entry from an already great restaurant, and we would expect nothing less from Pym Test Kitchen.
